Puffed Wild Rice

This little trick from Tom Cenci works great to garnish a dish or just as a snack in its own right.

Wild rice
Oil
Seasoning (optional)
Step 01: Puffing the Rice

Take a pan with a little oil and place just enough rice to cover the bottom of the pan.

Turn to a medium-high heat and allow the rice to crisp up shaking the pan, so it doesn’t stick or burn.

Once crispy transfer to a plate with a kitchen towel and allow to cool.

Season with your choice of flavouring.
