Old Bay Clarified Butter

Tom Cenci explains how to make clarified butter and gives the recipe for his favourite, cornmeal pancakes with old bay butter.

250g butter
10g Old bay
200g cornmeal
50g flour
1 tsp baking powder
60g yoghurt
150ml milk
1 tsp salt
Step 01: Clarify the butter

250g butter, 10g Old bay

Place the butter in a pan over a low heat and melt gently. Allow the milk solids to separate and the butter to become clear.

Carefully pour the clear butter fat into a bowl, leaving the milk solids in the pan, season the butter with Old Bay and set aside.

Step 02: Make the Pancakes

200g cornmeal, 50g flour, 1 tsp baking powder, 60g yoghurt, 150ml milk, 1 tsp salt

Make the pancakes by mixing the cornmeal, flour, baking powder with the eggs, milk and yoghurt then pan fry in a little oil.

Pour the old bay butter over and watch it absorb.
