Old Bay Clarified Butter
Tom Cenci explains how to make clarified butter and gives the recipe for his favourite, cornmeal pancakes with old bay butter.

- 250g butter
- 10g Old bay
- 200g cornmeal
- 50g flour
- 1 tsp baking powder
- 60g yoghurt
- 150ml milk
- 1 tsp salt
- Step 01: Clarify the butter

250g butter, 10g Old bay
Place the butter in a pan over a low heat and melt gently. Allow the milk solids to separate and the butter to become clear.
Carefully pour the clear butter fat into a bowl, leaving the milk solids in the pan, season the butter with Old Bay and set aside. - Step 02: Make the Pancakes

200g cornmeal, 50g flour, 1 tsp baking powder, 60g yoghurt, 150ml milk, 1 tsp salt
Make the pancakes by mixing the cornmeal, flour, baking powder with the eggs, milk and yoghurt then pan fry in a little oil.
Pour the old bay butter over and watch it absorb.
