How to Confit Artichokes
Learn how to confit artichokes with Neil Campbell.

- Lemon zest and juice #2
- Bay leaves #3
- Chopped Garlic cloves #3
- Olive oil 4ml
- White wine 300ml
- Mint 2 sprigs
- Coriander seeds ¼ tsp
- Step 01: Prep your artichokes

Firstly prep your artichoke as demonstrated in the other video.
- Step 02: Confit

Once your artichokes are prepped, add everything to one pan which will fit the artichokes snuggly, now place artichokes inside oil and set the pan over medium heat, waiting till you start to see bubbles form.
Now turn the heat down to low and slowly cook 15 to 20 mins.
Leave to cool in the oil until room temperature.
Confit artichokes will keep in the fridge for weeks.
