Date Burnt Butter

Neil Campbell demonstrates how to make a date flavoured burnt butter.

Diced Salted butter 125g
Date molasses 1tbsp
Lemon juice 1tbsp
Sage leaves #10
Salt ¼ tsp
Black pepper #4 grinds

Using a thick-bottomed pan on medium heat, add the diced butter, whisking frequently.

Continue to cook the butter, once the butter is melted and foaming add the sage leaves and reduce the heat to low.

Watch carefully as lightly browned specks begin to form at the bottom of the pan. Swirling from time to time.

You should start to get a slight nutty aroma, remove from heat and carefully add lemon juices.

Finish by adding the date molasses, salt and pepper.

Serve with charred leeks.
