Curing and Tea Smoking Salmon
Learn how to quickly cure salmon and smoke it without the need for wood chips.

- Step 01: Curing Salmon

Salmon, Salt, Sugar
De-skin the salmon if curing, place onto some tin foil or cling film and cover with equal amounts of sugar and salt.
Leave to cure for 24 hours then wash off the mix. - STep 02: Smoke the Salmon

Loose leaf tea
Place some loose-leaf tea into a pan and turn on the heat.
When the tea starts to smoke place the salmon on top in a steamer basket or colander and cover with a lid.
Turn off the heat and allow the salmon to smoke for about 10 minutes.
If it’s cured, then you can slice for smoked salmon, if it was raw you can pan fry or roast it.
