Mexican Molcajete

An ancient tool in Mexican cuisine, Molcajetes are still used to make salsas in Mexico to this day. Cut from volcanic rock, a molcajete is different from your typical pestle and mortar, because its coarse texture shreds the flesh and skin of tomatoes, tomatillos, onions, herbs and chillies, releasing their essential oils and creating a deep flavour in salsas.
